SMOKED HIGHLAND EGGS

Ingredients:

  • 12 Eggs
  • 2 lbs Breakfast Sausage
  • ¼ Cup BBQraft Black Gold Seasoning
  • 1 cup Code 3 Patriot BBQ Sauce

Instructions:

  • Preheat your smoker to 250°F.
  • Bring a pot of water to a boil. Gently place each egg into the boiling water and set a timer for 6 minutes. Once the timer goes off, remove the eggs and drain them, then place them into a bowl of ice water to stop the cooking process.
  • Once the eggs are cool, gently peel them.
  • Divide the sausage into 6 equal portions. Spread each portion into a circle about ½ inch thick on a cutting board.
  • Use a spatula to loosen the sausage from the board. Place one egg in the center of each sausage portion and carefully fold the sausage around the egg, pinching the seams closed to ensure the egg is completely covered.
  • Roll each sausage-wrapped egg in BBQraft Black Gold Seasoning to coat evenly.
  • Place the seasoned sausage-wrapped eggs in the smoker and cook for 45 minutes at 250°F.
  • After 45 minutes, brush each Scotch egg with your preferred BBQ sauce (we recommend Code 3 Patriot BBQ Sauce). Cook for an additional 10 minutes to allow the sauce to set and caramelize.
  • Serve and enjoy!
